I had a bunch of apples from a friend. So, I set up my little helper and went to town peeling and slicing.
Then I put the apples in my amazing electric skillet (which is a bazillion times better than a stock pot for this) along with some sugar, butter, and cinnamon. I let it simmer until the apples were crisp-tender, then added enough cornstarch to thicken.
It's easy to figure out what to do with homemade pie filling when your husband works with single guys.
Ooooo! I totally want the pumpkin butterscotch muffin recipe! Mmmmm.... :)

ReplyDeleteBeat together 4 eggs, 2c. sugar, 1 small can pumpkin, and 1c. oil. Combine 3c. flour, 2 tsp. baking soda, 2 tsp. baking powder, 1 tsp. cinnamon, 1 tsp. salt and mix with wet ingredients. Fold in 2c. baking chips (original recipe called for semisweet chocolate chips, I added butterscotch). Fill greased or papered muffin cups 2/3 full. Bake at 400 degrees for 16-20 minutes. Cool in pan for 10 minutes before removing from pan (very important or muffins will collapse!) ENJOY~

I doubled it to feed us all and cut the sugar down a cup and since I only had 2 C butterscotch chips that's what I put in. Turned out great!
